What is Charcuterie?

Charcuterie is defined as cooked and cured meats. The term encompasses a very wide range of products, often but not always these products are served unheated. Charcuterie products include but are certainly not limited to: pates, sausages, cured whole muscle meats such as pancetta, capicola, guanciale (seen at left), and prosciutto. They also include the entire array of dry-fermented sausages known as salami, saucisson sec, chorizo and many many more.
